Here’s the Fun Boy Three ($23) with smoked applewood cheddar and roasted portobello; the medium-done patty kept moist and juicy by a moreish combination of garlic miso butter, ketchup and truffle aioli, between a demi brioche firm enough to hold everything together, yet still remaining soft with a nice give as you bite into it. @burgersandheads
