t’s hard to get salmon done well — cooked enough that it retains its oil, but not too much that it becomes dry and flaky. Atlas’ 𝙎𝙖𝙡𝙢𝙤𝙣 𝙎𝙤𝙗𝙖 𝘽𝙤𝙬𝙡 (~$18) achieved that feat. Together with chewy soy shimeji mushrooms and heaps of furikake on an egg, I don’t think there’s a pairing Atlas doesn’t get right. -
