The jam undercuts any overpowering richness that may exist in the cake. It's also pretty unconventional (not that I'm complaining, I love it) that they use blueberry and raspberry instead of the traditional strawberry jam for their Victoria Sponge. A first for me to see mascarpone being incorporated in the cream as well, and I'm all for it!⁣

💬 Extras from my day: The cake was so good I decided to get another to-go for my mom. Just as I was about to pay though, the lady at the counter dropped the box with my cake. Long story short I almost got charged for the damaged cake but in the end I got it for free. Still paid for another sticky date pudding because I felt bad 😅 ⁣
