Attended the Western USA Cheese Showcase virtually last week and I enjoyed learning more and sampling the various cheese during the session.
⁣⁣
Here are the different farms we got to learn more about along with the cheese that we tried!:
⁣⁣
🧀 @pointreyescheese (California) 🧀⁣⁣
𝐎𝐫𝐢𝐠𝐢𝐧𝐚𝐥 𝐁𝐥𝐮𝐞⁣⁣
I rarely eat blue cheese because of the strong flavour but I thought this was less strong and it went well with sweet items like dried fruit and chocolate too!
𝐓𝐨𝐦𝐚𝐑𝐚𝐬𝐡𝐢⁣⁣
This was very flavourful and there is truly that spicy kick with the use of Shichimi Togarashi in this cheese.
𝐓𝐨𝐦𝐚𝐓𝐫𝐮𝐟𝐟𝐥𝐞⁣⁣
This was my favourite out of the three because the earthy flavours from the truffle complemented the richness of the Toma.

🧀 @Tillamook (Oregon) 🧀⁣⁣
𝐌𝐞𝐝𝐢𝐮𝐦 𝐂𝐡𝐞𝐝𝐝𝐚𝐫 𝐏𝐨𝐫𝐭𝐢𝐨𝐧𝐬⁣⁣
Aged for at least 60 days and were very smooth and creamy. ⁣⁣
𝐅𝐚𝐫𝐦𝐬𝐭𝐲𝐥𝐞 𝐓𝐡𝐢𝐜𝐤 𝐂𝐮𝐭 𝐒𝐥𝐢𝐜𝐞𝐬 - 𝐒𝐡𝐚𝐫𝐩 𝐂𝐡𝐞𝐝𝐝𝐚𝐫⁣⁣
Aged for at least nine months, the flavour is indeed a lot more intense compared to the medium cheddar. ⁣⁣
𝐒𝐦𝐨𝐤𝐞𝐝 𝐁𝐥𝐚𝐜𝐤 𝐏𝐞𝐩𝐩𝐞𝐫 𝐂𝐡𝐞𝐝𝐝𝐚𝐫 𝐏𝐨𝐫𝐭𝐢𝐨𝐧𝐬⁣⁣
I liked how these have a smoky and spicy flavour, my favourite out of the three.
I generally loved how these cheese are in portions, making them easy to eat and store too.⁣⁣

🧀 @beehivecheese (Utah)🧀 ⁣⁣
𝐓𝐞𝐚𝐡𝐢𝐯𝐞 - 𝐔𝐭𝐚𝐡 𝐜𝐡𝐞𝐝𝐝𝐚𝐫 𝐫𝐮𝐛𝐛𝐞𝐝 𝐰𝐢𝐭𝐡 𝐞𝐚𝐫𝐥 𝐠𝐫𝐞𝐲⁣⁣
The tea flavour was pronounced and fragrant, complemented by the creaminess of the cheese.
𝐀𝐩𝐩𝐥𝐞 𝗪𝐚𝐥𝐧𝐮𝐭 𝐒𝐦𝐨𝐤𝐞𝐝 - 𝐂𝐨𝐥𝐝 𝐬𝐦𝐨𝐤𝐞𝐝 𝐰𝐢𝐭𝐡 𝐰𝐚𝐥𝐧𝐮𝐭 𝐰𝐨𝐨𝐝 𝐚𝐧𝐝 𝐚𝐩𝐩𝐥𝐞 𝐰𝐞𝐝𝐠𝐞𝐬⁣⁣
The smoky flavour was just right, well balanced with the sweet creamy flavours of the cheese.⁣⁣
𝐁𝐚𝐫𝐞𝐥𝐲 𝐁𝐮𝐳𝐳𝐞𝐝 - 𝐔𝐭𝐚𝐡 𝐜𝐡𝐞𝐝𝐝𝐚𝐫 𝐫𝐮𝐛𝐛𝐞𝐝 𝐰𝐢𝐭𝐡 𝐞𝐬𝐩𝐫𝐞𝐬𝐬𝐨 𝐚𝐧𝐝 𝐥𝐚𝐯𝐞𝐧𝐝𝐞𝐫⁣⁣
The cheese is both nutty and creamy with a hint of the floral fragrance from the lavender.⁣⁣
I liked all 3 so much I couldn't decide on a favourite 😍
