Marinated for 24 hours and roasted for 24 hours, this was incredibly flavorful, and fork tender. The rich, molassesey flavors which (I assume) come from the coffee and palm sugar really brought a simple piece of pork to the next level. The salt and squid ink roasted potatoes and gem lettuce (not pictured) that accompanied the dish were excellent compliments to this monstrous piece of meat. Did I love this place?
