Yes, this rendition is good but I would have preferred for it to be more intensely herbal. The pork bone-based broth is wonderfully sweet but without the pronounced notes of angelica root (and a host of other herbs and spices), it lacks depth. Nonetheless, it makes up with its varied selection of pork cuts; we had two – the ribs and the shoulder. The shoulder is a great cut for BKT for its rich flavour, and balanced and marbled fat.
