It is then simmered in a semi-dry gravy of coriander seeds, cumin seeds, dried red chilies, powdered turmeric, garlic paste, ginger paste, and garam masala (a blend of cumin seeds, coriander seeds, cardamom, cinnamon, cloves, black peppercorns, bay leaves, star anise, and nutmeg).
