Various cuts of mutton are simmered for over 3 hours, along with turmeric, coriander, fennel, cardamom, cumin, star anise, cloves, celery seed, and other spices, in a huge stainless-steel pot. The meat is then removed to prevent over-cooking, while the hot soup / broth is continually simmered. Combined only upon serving, the assembly is done bowl by bowl.

The result is a thick cloudy rich soup / broth, with robust meaty savoury salty earthy spice flavour, and a thin sheen of oil. The mutton meat is chunky and tender soft, with meaty savoury spice flavour. Garnishes of fresh coriander and fried shallots carry a crisp crunch and vegetal herbal earthy sweet flavour. Served with fresh baguette bread which is crisp and soft with bready sweet flavour.

They offer a range of mutton parts, besides mutton meat and mutton ribs, there is tongue, stomach / tripe, bone marrow, and brain. Timing and staggered cooking is carefully controlled so each part is consistently done.
