Their version is smoky with wok hei / breath of the wok, with long cylindrical yellow egg noodles and thin bee hoon / rice vermicelli noodles tossed with chicken egg, a stock of pork bones and prawn shells, and crunchy pork lard. Garnished with deshelled prawns, sotong / squid, pork belly slices, bean sprouts, and spring onions.

Has a slippery silky chewy crunchy bouncy tender texture with smoky grainy eggy sweet savoury salty vegetal herbal flavour. A splash of lime juice lends zesty sour tangy flavour. Best eaten quickly when served hot!.
