Love at first wobble, The Massesโ more premium rendition of the classic Japanese steamed savoury egg dish was so addictive I could inhale one all by myself. An exceptional starter and performing nicely as a side, The Egg ($9) is available in both hot and cold versions. And as such, we went with the recommended hot option. With the spoon effortlessly gliding through, egg custard itself was umami, velvety and smooth (an amped up chawanmushi, really).

However, the highlight was certainly the combination of the elements so get a little bit of everything in each scoop and you can get a party started in your mouth. The ikura releasing spurts of briny goodness and tobiko a similar grainy burst of salty flavour while the uncommonly thin chips provides a somewhat delicate sweet-savoury crunch which would then slowly melt in your mouth when paired with the custard. Also in the mix is the light nuttiness from the layer of beurre noisette to enhance the taste!
