Rebel rebel completely lives up to its name, every dish was kinda quirky, with unique pairings β but it works.
π· The pig head tagliatelle is a must try! The pasta was slightly spicy and delicious, with the crispy pig ears providing a nice crunch.
π§ The creaaaamy burrata with mussels was π― as well. I didnβt know mussels would go with maple syrup, but it was really tasty.
π The whipped pork fat had to be the most interesting dish β the sweet farro (nutty texture) on top really balances out the βgelatβ-ness of the pork fat. Goes well with the sourdough!
