Every detail was great, down to the frigging beansprouts which were crunchy. The dark sauce has some caramel earthiness which I didn't like, but the chili was like McDonald's garlic chili on crack
The soup has good depth and was slightly sweet, but the toppings were the star. Noodles were soft. Here goes the review of the toppings
Sliced beef was meh but it works w the sauces

The beef jelly thing was amazing. It's literally melty beefy umami
The beef balls were so ridiculously bouncy and savoury, with bits of ligaments inside. They're by far the best I've ever had and it's hard to even describe how crazy good they were
Tripe was crunchy too
There's one piece of brisket/short plate? Which was sweet and flavourful
The meats were really well marinated and full of depth in general
Despite the proportion of tourists, this is a must visit spot
