A rare find serving Peruvian delights here in Jaya One. Chicken's what to come for, the Pollo A la Brasa, to be specific. Often mistaken to be the same as Portuguese/South African roasts, these ones are distinguishable by its smoky flavours, thanks to the process of live charcoal roasting. Brasaria intends for that to set them apart, and I gotta say, it does! The chicken thigh relents to a juicy, tender texture while the skin yields an umami flavour that's presumably achieved through a combination of intense marination and charcoal roasting. The true tip here is to take advantage of the Aji sauces! Made from imported chillies (Aji being one of them), the creamy sauce is hot and delicious. Have it with everything - fries, chicken, corn.
