Using a portion of the duck meat from the Barbecued Peking Duck order, Chef Tan deep fried it with dried chilli, roasted minced garlic, pepper and fine salt, ala 避风塘 style.

What resulted was an addictive plate of meat that goes so well with rice and if you prefer a pint of beer!
