That's the first impression I get from their tendon. Thanks to food bloggers that hype places elsewhere, I had my tendon at Akimitsu with relative ease.

They studied their competition well. With Ginza Itsuki setting the standard for the tendon market, it seems that the norm is now at least complimentary chawanmushi, beansprouts zensai. Quite a sad serving of chawanmushi though.

Akimitsu batter is light and the tare is flavourful. Was the egg supposed to be cooked? I was half expecting the yolk to flow when I break it apart. And the oily feeling? Because when I grabbed the bowl to turn it around, my hands got oily. Kitchen or Server doing? Prefer this to Kohaku 🙊
