Octopus, Assam Pedas Hummus, Renkon Chips ($32) – Served on a base of creamy hummus infused with slightly sour-spicy Assam pedas paste, the sous-vide octopus was fairly tender while retaining its signature chew. A nice balance of smokiness and heat; I especially enjoyed the crispy lotus root chips.
