Made with plenty of Uji matcha powder (as seen from the dark green intensity) and fresh cream, the dense baum is shaped to mimic a bamboo stalk. This is definitely the best baumkuchen I have ever eaten and I am sure that once you’ve tried this, you wouldn’t be satisfied with commercial mediocre baumkuchen. The matcha flavour is really prominent right here, packed with vegetal astringency and fragrant earthy umami notes~ I was really impressed by the very mild sweetness level and hence you can really taste the bittersweetness of the matcha, with a satisfying lingering bitter undertone. Though some might find the baum a little too dense, I really love the texture and like how it isn’t overly dry nor greasy.
