Only a few ingredients go into this simple yet satisfying dish: finely minced pork, a slightly soft-centred egg, chopped coriander and lashings of fragrant garlic oil. In the hands of the Thai lady cook, the porridge is prepared Teochew style, which means the rice grains are still intact and not reduced to a smooth mush.
