The most decadent cream puff came with freshly shaved Alba white truffles. And that's not any cream puff. It's a Zeppole puff with chantilly cream and hazelnut nougat.

For a moment I wondered if shaving truffles over this does anything to the dessert. Turned out, besides the delicate aroma of the truffles, the shavings imparts earthiness to the dish as well. So good.

This dessert at La Brezza of St Regis is part of a series of Alba white truffle dishes created by Executive Sous Chef Fabio Granata. Besides this, expect four other dishes that highlights the delicate full-bodied earthy aroma of these prized Alba delicacy. La Brezza's new truffle menu is only available till end of November.
