It's not everyday we look back & appreciate the work of the culinary heroes championing this trade behind the scenes.

Here supporting another young Singaporean hawker's passion amidst the hustle bustle of our favourite old airport food centre. Tucked along near the middle section is one brightly lighted blue signboard stall selling this traditional Teo Chew fish soup.
.
This humble bowl comes with two fresh large prawns, a couple of tender minced meat balls & some optimally sliced Batang (mackerel) fish that were silky smooth, succulent & firm to bite. I also personally like that the soup dashed with hint of Chinese wine wasn't the full-bodied kind & was refreshingly light - opted for the addition of milk which accents the flavour of the broth but doesn't overpower it. It was a terribly warm evening when I visited yesterday, but this nevertheless remained comforting for both the body & soul.
.
The life of any hawker is tedious, with long working hours, sweltering heat & sometimes annoying business challenges. Yet I see a promising future at this stall engineered by 24 year old young hawker Jason & his friend (same age as me, what am I doing with my life?) Some of their signatures include red grouper fish soup as well. Do bookmark this & support next time you guys are at old airport yeah?
.
P.S. At times like this I feel like I write with passion but seriously this was totally not sponsored 😂 Good food coupled with warm service just always make me super happy. Thank you.
