Using premium grain fed Angus beef that has been marinated in mirin and sake, and stewed in white wine, it is wonderfully melt in your mouth tender. The stock is on the sweet side probably due to the marinate of the beef and sweetness of the radish. The hand made noodles were springy though the amount is small.
