The owner used red fermented bean curd, 南乳 to braised the trotter. It helped to remove the porky smell and gave this dish a depth of flavors. The tendon and meat were so tender that I hardly need to bite.
If you are afraid of the alkaline smell in the noodle, just ask for a bit of vinegar or eat the bee hoon instead. .
