Malatang (麻辣烫) is named after its key ingredient, mala sauce, which is flavoured with a combination of Sichuan pepper and dried chilli pepper. The word mala is comprised of the Chinese characters 麻 (má) meaning “numbing”; and 辣 (là) meaning “spicy/hot”. When put together, it also refers to the feeling in one’s mouth after consuming the sauce.
