The Ice cream with Vegemite was probably one most “Australian” dessert, using the local favourite spread on a barley chocolate Gânache.

From a range of choices for our mains, we selected the Roast Pork Chop and topped up for the Sirloin of David Blackmore Wagyu, 2 meats that would require finesse in doneness.

The famous Fruit Cake by Heston, 1 of our must-try picks at @dinnerbyhb for our 3-course meal.

The famous Meat Fruit - the smoothest, richest yet lightest chicken liver parfait, covered by a mandarin gel, served with grilled bread.

Fillet of Black Angus; aged at least 28 days and cooked over wood and charcoal embers.

So the spit roasted pineapples you saw earlier, goes with the Tipsy Cake by @dinnerbyhb - a take on the bread and butter pudding, the bread has a sugared crispy crust and a super fluffy interior, soaked with alcohol.
