It's been a hot minute since I have been back at Fat Belly and their steak is just as good as I remembered!
For starters, look no further than their Raclette Cheese ($18) with Toasted Sourdough ($6) served with a side of salted butter. Such an indulgent number! The gooey melted cheese was so shiok and comforting with the saltish crisp bacon bits studded in the mix. The slices of sourdough were crusty and fragrant too, the perfect thing to mop up all that rich goodness.
Moving to the star of the show, the steaks arrive with a robust crust from the open flame and together with salt, garlic confit and mustard sauce - each cut was grilled to pink perfection with that deep, smokey char. The Australian Full Blood Wagyu MS 8/9 Denver ($65) was bolder in flavour and rather beefy. The Denver cut with the more rectangular, block-like shape had a more uniform marbling which I personally prefer. It was simply rich and juicy. With the more tapered and triangular shape, the American Wagyu MS 6/7 Picanha ($55) had higher marbling and glossy fat rendering. Succulent with that yummy seared fat cap - providing that added layer of buttery decadence.
Don’t sleep on the sides because the Pomme Puree ($10) was super silky smooth. The velvety mash was executed wonderfully with plenty of butter and cream. The charred Fried Brussels Sprouts ($14) were so moreish as well! The sweet-savoury garum caramel with crunchy seeds gives that much-needed oomph.
All in all, ignoring the fact that Serene Centre is still undergoing renovations, it is a really nice spot for some solid steak.
