We also had Putian “Bian Rou” in Chilli Sauce ($5), which is similar to wanton in vinegar and chilli oil (红油抄手), except that the dumpling skin is made from pork. The skin is thin, the pork filling is generous and the dumpling goes very well with the spicy and vinegary sauce.
