It's raining truffles at St Regis La Brezza, which is now serving a series of Alba white truffle dishes created by Executive Sous Chef Fabio Granata. Expect five dishes of milder flavours that highlights the delicate full-bodied earthy aroma of these prized Alba delicacy.

For main course, opt for this hearty dish of braised guinea fowl. The lean yet flavourful characteristics of guinea fowl was mild enough to be subordinate to the nutty earthy aroma of white truffles. Mix that with soft polenta, and complement the truffle fragrance with the smoky aroma of the brussel sprouts.
