I've lived in Singapore for 13 years now but I had never developed a liking for hokkien mee. I always thought it's too wet and soft, not a lot of flavours, and the chilli paste is often smelly and not spicy. That is until I tried this hokkien mee from Yong Huat!
I've been to Yong Huat before to try out their fishball noodles and char kway teow, but always shied away from hokkien mee due to my dislike. I was still a bit skeptical but then I'm glad I tried it out! It was rich and refreshing at the same time. The lime really made a difference. Chilli sauce was flavourful even though not that spicy. Definitely lots of wok hei, smoky and so satisfying! Now time to try other hokkien mee places...
