The Karaka takes Ippudo's original smooth and creamy pork broth and amplifies its flavour twofold with the addition of spices, sweet and spicy miso paste and Sze Chuan peppers. Complex, fiery and savoury, the soup itself was the highlight for me. That's not to say the rest of the ingredients weren't exemplary as well - slurp-worthy al-dente noodles, a most addictive minced meat miso paste that enriches the whole bowl when mixed in, tender pork belly chashu and a gooey ajitsuke tamago.
