Ochazuke is made by pouring hot tea into a bowl of rice with toppings (pickles, vegetables, fish or meat). Instead of just tea, the restaurant uses a soup stock made with tea, seaweed, dried fish, chicken bones, sake, mirin and soy sauce. The soup stock is provided in a small kettle and one pours the stock over the rice, vegetables and other toppings
