Chef Virgilio Martinez runs Lima’s gastronomic hotspot Central Restaurante, which has received critical acclaim since it’s opening in 2010.

A graduate of Le Cordon Bleu, Toronto, Chef Martinez worked in restaurants in New York, London, Singapore and Spain, and with molecular cooking techniques, some of which he incorporates into the dishes at Central.
