The first time I had this awesome shrimp dish at Sabio's Hangover Brunch with unlimited tapas, I actually ordered 3 just for me!!! I've experimented a lot with cooking shrimp and these have the perfect firm and juicy texture, which I've learned tends to come from either pre-treating with brine or baking soda or both... Still even knowing the process, my shrimp really don't compare to the mastery of Sabio's version... I'll keep coming back and greedily ordering more!
