It's not Ichiran, Ippudo or Santouka.
But 'burnt' Gogyo 五行 ramen near Nishiki market at Kyoto. The blackish looking burnt miso ramen came with a layer of black, char-like specks on top.
The broth is said to be cooked up to 300 degrees! Resulting in a soup that is spectacularly rich which is hot from the first till the last drop. Hugely satisfying. The bad: my throat still feels the heat now.
