Wagatomo is a newly established Japanese restaurant that aims to bring a bolder, smokier style of modern Japanese cuisine cooked with binchotan grills. Helmed by Chef Tomoyuki Kiga, he has amassed a wealth of experience from his culinary journey across the world and now brings his unique touch to the refined menu at Wagatomo. To start, diners can begin with the refreshing Momotaro Tomato ($16) that is tossed with a fuji apple vinaigrette and finished with a dash of amazu, a sweet Japanese vinegar. Key highlights from the menu include the A5 Wagyu Pizza ($32), generously topped with slices of wagyu, and complemented with ponzu mayo, pickled myoga and yuzu kosho cream before a drizzle of truffle oil, and A5 Trip Tip ($98) that has been slow cooked for hours with a sansho spiced rub and served with charred onion puree.
Other dishes include the starter Moyashi ($14) of soy marinated bean sprouts with frozen pomelo in a ume dressing, Hokkaido Scallop ($27), thinly sliced sashimi-grade hotato that is served raw with the unique mango sambal that brings a touch of sweet-spicy flavour, Scampi Ochazuke ($35) that uses a savoury scampi dashi to replace the traditional ochazuke green tea that is poured over rice. End the meal on a sweet note with the Monaka ($9), a wafer dessert sandwiched between house-made matcha ice cream and yuzu azuki beans.
