Ji Ji Signature Char Siew Wanton Noodle (Dry)(S)($4.50) A small bowl consisting of thin noodles, char siew, bok choy, pork lard, and a savoury soup with two wantons. If you go for the $5.50 bowl, you get more toppings like crispy deepāfried wanton, but I was good with just a simple bowl.
The noodles need to be mixed before eating so every strand is coated with the savoury light and dark sauce and pork lard oil. Texture was chewy, leaving a greasy mouthfeel from slurping since the noodles were wellācoated. Char siew was tender, caramelised sweet, and generous in portion, with a flavour slightly different from the standard char siew taste. Loved the glistening crunchy pork lard for added fragrance and crunch.
The soup was savoury with a tad of herby and peppery notes, plus sweetness from wolfberries, making it more complex than a typical clear soup. The wantons were big, umami, meaty, and wrapped in slippery smooth skin. Overall, a good bowl, but be ready to brave the queue to get one.
