Gambas & Guacamole Sautéed tiger prawns, eggs, guacamole, mesclun salad, vine cherry tomatoes & sourdough. Since I had my eggs done sunny side up previously, I decided to go with scrambled eggs for this to try the difference with nuyolk eggs. The eggs did turn out more orangey than usual but I preferred the yolk on my sunny side up where I get to taste the creaminess of it. The prawns were grilled until fragrant but a little overcooked as the shells were sticking to the flesh. I love the guacamole for its creamy texture, mildly sweet and nutty flavour.
