The desserts at Burnt Ends never fail to tick all my boxes with sweetness, acidity and varying textures in perfect harmony. This one was just brilliant: fluffy meringue brΓ»lΓ©e and buttery biscuits with blueberry sauce trickling all over, and smack in the middle of it, a jolt of citrusy lemon sorbet. And it's not just any ordinary lemon sorbet - this one has an unexpectedly thick texture as a result of the natural pectins that emerge from heating lemons in the oven. Don't you just love science-y food?
