I haven't baked cupcakes for a while but thought I'd bake this for our monthly cupcake day since it fell on a weekend this month! The request I received was a jam-filled cupcakes so I thought I'd add the extra element of chocolate + coconut goodness and make it a lamington cupcake!

Super sugary cupcakes!! I usually use mini Oreos as decoration on the top but I couldn't find any this time... I think 1/2 oreo still worked though!? My boyfriend's favourite cupcakes! ;-)

I had left over cream from baking cupcakes so what better to use cream than to make some cheesy homemade carbonara sauce!! It was my first time using my home grown spring onions which was pretty exciting too (easiest thing to grow seriously!). All you need is butter, cream, parmesan, mushroom, bacon, spring onion, onion and seasoning! Easy peasy!!

This carrot cake/muffin was such a delight!! Delicious, moist and just the right size to share with a friend over coffee!! Loved it!

Served with cold drip coffee maple pearls, pure maple syrup, blueberry molasses & double whipped cream. I loooved the combination of popping coffee pearls and whipped cream!! It reminded me of coffee jelly I used to love on Japan (it tastes better than it sounds - trust me!). However, the awesome flavour of this coffee jelly was too subtle when you ate it with the brioche French toast unfortunately... The French toast itself was good though!! But I wouldn't mind if the coffee pears were bigger/had stronger flavour for it to come through when you actually ate it with the main component of the dish - French toast!

Poached eggs crumbed in panko, served with charred asparagus, raisins, capsicum curls & a parsnip and jeruselum artichoke purée. Again, the poached egg was done to perfection! The parsnip and artichoke purée must've been roasted or something because it had a slight smoky flavour which went really well with the sweet asparagus, raisin and capsicum! This was my second time having crumbed eggs though and I liked my first crumbed egg experience better at Lil' boy blue but I guess the dish was a little cold by the time I got to it so it's a little harsh to compare! Sorry!

A whole avocado with chevre, opal basil, micro mint, green tea sea salt and charred lemon. The poached eggs were done perfectly and the avocado mash was delicious! I particularly liked that you could control the amount of salt to your liking. But the best thing in this dish was the charred lemon! It added a slight smoky flavour to the dish! I really like my avocado mash lemony so I wish I had TWO charred lemons pieces though!!

The flavour of this chai was very subtle and very refreshing compared to other chai teas I've tried!! I really liked it but it's probably not recommended if you love the strong spiced flavours of chai... The milked was frothed to perfection!

Slow roasted king oyster, shiitake, oyster and enoki mushrooms on a house-made pumpkin, spinach and sundries tomato polenta bread topped with goats cheese, lime and red chilli oil. This was quite good with lots of mushrooms which I loved but since I really enjoyed the sweet corn ricotta hotcakes more, I'm biased towards the hotcakes... And I don't remember this one as much...! NOOO! I'm definitely keen to go back and try this again!!

The spices are roasted and ground in house! Tastes amazing but slightly too much water for me maybe? I really like it creamy!!

Super rich and super delicious!! There was such a generous portion of mascarpone!! Maybe a bit too rich to eat on your own but like I said before, if you're craving it and can't finish it, you can always take away!!
