I guess I inherited my foodie genes from my parents. My mom used to tabao braised duck rice and kway teow noodles from this stall at the food centre after her marketing at the Redhill wet market when I was young. Hearing that the stall holder (Uncle Tan) will be retiring soon due to health reasons, my mom brought me here to enjoy the delicacy firsthand. Be prepared to queue and be patient as Uncle Tan has to cook the noodles and chop up the braised duck all by himself.
Uncle Tan's braised duck has a savory and prominent herbal flavour. The caramelized sauce goes so well with the yam rice and I even added it to my already-yummy dry kway teow noodles. We enjoyed every part of the duck; the breast meat was tender while the leg meat was so soft that it just falls apart easily. If you are game for it, try the other duck organ parts! 😘
P.S.: The stall is closed on Wednesday, Thursday and Friday.
He starts by frying white sugar till it caramelises, before slow cooking it with soy sauce and different types of herbs such as cinnamon, cloves and blue ginger. The sauce has a mild herbal flavour that balances the sweet and savoury notes.
