That delicious peanut-based creamy brown soup that goes well with shrimp paste called bagoong. Historically cooked with ground peanuts but lately with peanut butter to give that smooth finish, kare-kare is cooked with oxtail and tripe for long hours and added with vegetables at the very end and served steaming hot. The peanutbutter-y taste coupled with that salty shrimpy paste is a marriage that everybody saw coming. Its a Filipino staple that needs to be discovered by all and rediscovered every other week.
