Take the beetroot sorbet with that small pool of balsamic jelly and drop it in your mouth, then take a small sip of hot hibiscus tea (inside that cute porcelain cup/bowl). Let it melt, and feel everything evolve in your mouth and come together.

Delicately sweet yet distinctly earthy beet in a cold sorbet; followed by the sharp and tangy acidity of vingarette and jelly, and lastly, the soothing warmth of tea with a bittersweetness of hibiscus. A dance of flavours, textures and temperatures; befitting of a sensory explosion. It took me some time before I could even understand the brilliance of this deceptively simple dish, presented elegantly as one single grape.

Meltingly tender flesh, lovingly cooked in its own fat, paired with berry compote to cut the greasiness; laid on a bed of delicate spinach leaves, mushroom fricassée, and slow roasted duck fat potatoes.

The hallmark of a great duck confit for me lies in a well-browned crisp skin, a thin layered of fat underneath. This, is perfect execution; an affordable, genuine taste of France without having to fly over.

Will be coming back for their famed risotto.

In a bit of a dry spell recently; can't seem to express myself precisely, adjust to shift work adequately, or make full use of the post-shifts to hunt for food. Nonetheless, long breaks are a most certain welcome to ponder about the future, and this - perfect for idyllic mornings and watching the world go by.

Gorgeously presented starters of the SG50 menu to showcase Singaporean cuisine, with a very liberal dose of imagination, only available for the month of July and August 2015. Part of the draw of @porticosg is the usage of locally sourced ingredients and their emphasis on freshness.

Slices of marbled wagyu rump with a robust beef flavour, and Iberico pork cheeks, delicately tender with melt-in-mouth fats. Both had a subtle, yet wonderfully charred fragrance that worked well. Plated on a bed of Japanese rice, and garnished with sesame seeds, chopped spring onions and thin silvers of fried ginger. Served alongside Tsukemono like pickled daikon and marinated ginger to cut the richness, with a bowl Miso soup. All that quality, variety, and presentation for $15 in a hawker centre? Unbelievable! Pity this is only available for lunch..

Velvety smooth noodles accompained by a seafood medley of succulent prawns, fresh scallops and chunks of juicy crabmeat, swimming in a thick scampi and satay XO broth. Garnished with sprigs of spring onion, and halved cherry tomatos.

Came here for their daily specials which weren't available today, but got rewarded by this serendipitous discovery instead. Also not to missed, is their exceptional Hokubee beef bowl with onsen tamago.

I love to return to new(ish) restaurants which had left a great initial impression, to see how they have progressed. Pleased to report much innovation and creativity still present in their cuisine! They certain have grown from their modest beginnings in the neglected Katong Shopping Centre as The Humble Loaf.

Trio of handmade italian ravioli of duck confit exploding with flavor and fat, accentuated by a heavenly sauce made from duck jus, chestnuts, and jerusalem artichokes. Elegantly executed, and very impressive!

Gorgeously brown and gamey, beautifully roasted with crunchy yet tender green peas, crisp bacon bits, sweet turnips and a wonderfully rich and smooth sauce after that cognac flambé. I hate peas with a vengence, but this gem here had me changing my mind. Coming back for the set dinner!

Really exquisite celebrity chef versions of beef rendung and kong bah bao, both fall of the wooden/plastic fork tender. Local delicacy represent!

My friend was amazed at how there was not the slightest bit of fishy taste. This was average for me, the only thing that stood out was the freshness, a fundamental philosophy behind Waku Ghin contributing to its success, branding and label as a haute restaurant. And, such beautiful display and plating for a food fest/market!
Everything said, would very much concentrate on the alcohol instead 🍶

Tons of spices: probably lemongrass, coriander, parsley, tumeric, chilli, and possibly some pinenuts and ginger. Only a hint of sweetness, so it wasn't overwhelming like many of the local versions. Miss the egg in the starchy-sauce, and mantou though!

Because, iconic dish. Tried and tested, so much savoriness and umami. Can now proudly say that I have had this, but I reckon the authentic restaurant experience will be miles better and way fresher!
